The farm sits at elevations between 1,800 and 1,980 meters above sea level—ideal conditions for the delicate Geisha variety, which thrives at higher altitudes. Although one strain of wild Geisha is believed to originate in the Western Omo zone, this is the only district in the region suitable for coffee cultivation. Local farmers traditionally grow sorghum and maize rather than coffee. However, wild Geisha still grows in the surrounding coffee forests of Bench Maji, and outgrowers are occasionally contracted to harvest these cherries and bring them to nearby farms for processing. Harvesters carefully handpick only ripe, red cherries and transport them to the farm’s processing mill. The cherries are floated to remove unripe or defective fruit, then spread on raised drying beds. They are turned regularly to promote even drying, which typically takes about 20 to 23 days.
