With more than 15 years of experience at CENICAFE, a master’s degree in agricultural production systems, a doctorate in genetics, and a background as an agronomic engineer and coffee producer, he brings exceptional expertise to developing an ideal aging method. His inspiration comes from Manizales’ rich heritage in both coffee and spirits production. In particular, the renowned rum from Licorera de Caldas motivated him to explore aging coffee in used liquor barrels. Andrés continues to experiment with coffees from various regions to understand how barrel aging influences each origin’s unique flavor profile. The same environmental factors that make this area perfect for aging spirits also benefit coffee processing. The high elevations of the Caldas region create cooler temperatures, allowing for a slower, more controlled aging process. For this lot, the coffee was aged for two months in barrels previously used to mature whiskey. Throughout the process, humidity levels were carefully monitored and regulated to ensure consistent results.
